Nectarine Tart

I am so ready for Spring, and by Spring, I think I really mean Summer! I am ready for warmer temperatures and the wonderful fruits and vegetables that come in the summer. I was at Costco and bought nectarines. This is a sure sign that I don't know what time of year it is here in NY. Nectarines that come from South America are not going to be good and I know it. I just couldn't resist. As a result, I had 8 nectarines that are too hard to eat and they will probably rot before they ripen. Solution? Cook them into a pie!

(Out of Season) Nectarine Tart

Serves: 8 - 12

1 recipe flaky pie dough
8 nectarines, sliced thin
3/4 cup brown sugar, divided use
1/2 teaspoon cinnamon
pinch freshly grated nutmeg
1/4 cup (1/2 stick) unsalted butter, melted
1/2 cup flour

Heat oven to 375˚ F. Roll out pie dough and fit into a 9 or 10-inch tart pan. Line the dough with parchment or foil and fill with pie weights or beans. Bake 20 minutes. Remove the beans and continue baking until the crust begins to brown.

Meanwhile, put the sliced nectarines and 1/4 cup brown sugar in a saucepan and cook until the nectarines are tender and saucy. Add the nectarine slices to the pie crust and spread evenly. Sprinkle with cinnamon and nutmeg. Combine the melted butter with the remaining 1/2 cup brown sugar and flour. Press into crumbs and sprinkle the crumbs over the nectarines.

Bake until the crumble is golden brown, about 20-30 minutes.
